Stuffed Baby Potatoes

INGREDIENTS:
(Makes 12)
12 even sized baby new potatoes
Sea salt
100g (4oz) Irish Cheddar, finely grated
(or any cheese you prefer)
Flat leaf parsley spriglets, for decoration
DIRECTIONS:
1. Scrub the potatoes and make a slit along one side. Place in a roasting
tray and sprinkle with crumbled sea salt. Transfer to a pre-heated oven
400°F for 30 minutes or until tender.
2. Remove from the oven and squeeze the potatoes open along the slit.
Fill with the grated Irish Cheddar cheese until overflowing over the top
of the potato. Return to the oven for the cheese to melt. Then serve decorated
with fresh parsley spriglets.
